Giuseppe Pollio founded POLLY-O in Brooklyn in 1899. Pollio began his company in Coney Island by selling ricotta and mozzarella cheeses. The company was bought by Kraft Heinz in 1986. The POLLY-O cheese factory is currently located in Campbell, New York and the company is known for producing ricotta, mozzarella, and string cheeses. The plant manufactures nearly 100 million pounds of cheese per year.

The main building at the POLLY-O plant had four stories and was divided into separate areas for each stage of production. It contained a plethora of dairy equipment, including steam traps, kettles, separators, evaporators and pasteurizers. The building also contained packaging machines, heating machines, and molding machines that were insulated with asbestos-containing materials.
The plant also had numerous boilers that were cleaned, dismantled, and replaced. Asbestos dust from the insulation was sent into the air. Workers were also exposed when replacing the rounded seals and motors on the evaporators, and when scraping off the gaskets and repairing and replacing internal parts on pumps and valves. While the pasteurizers at the POLLY-O facility were not insulated, the pipes connected to them were, and when disturbed, large amounts of asbestos were emitted into the air.
